Apple Chai Dumplings





Is your mouth watering yet? These Vegan Apple Chai Dumplings are delicious and so easy to make. Instead of making a dough, I used rice paper. I love when making dessert is this quick and easy. Check out the details below!






 

Apple Chai Dumplings

(makes 5-6 medium dumplings)


Ingredients:

  • ⅛ tsp star anise

  • ¼ tsp cloves (about 5 cloves)

  • ¼ tsp ground ginger

  • ¼ tsp nutmeg

  • 1 tsp cinnamon

  • 2 green apples

  • 2 tsp juice of a lemon

  • 1 tbsp brown sugar

  • ½ tbsp arrowroot powder

  • 1 tbsp vegan butter

  • Rice Paper


For the icing:

  • 2 and 1/2 tbsp coconut cream

  • 8 tbsp powdered sugar


Method:


  1. Prepare your spice mixture. If you are using whole star anise and cloves, grab a mortar and pestle and add all your spices. Grind and mix the spices together until the star anise and cloves are broken down. (I like to pull out the larger hard pieces that won’t break down).

  2. Peel and chop the green apple and add to a bowl. Add the lemon juice, arrowroot powder, brown sugar, and spices.

  3. Grab a pot and melt vegan butter. Once heated add the apple mixture and cook the filling for 8 min on medium heat. (if the filling starts to stick add a splash of water)

  4. Once the filling is ready it's time to assemble the dumplings. Grab a large bowl or tupperware and fill it with tepid water. Soak rice paper in the bowl until the paper becomes malleable.

  5. Shake the excess water off of the rice paper and lay it down on a cutting board. Place the filling in the centre of the rice paper.

  6. Fold into a square. Fold the top down, then the bottom up and then the sides inwards, flip. Soak another piece of rice paper and lay it down on the cutting board. Place the dumpling in the centre of the rice paper and fold again. (Doubling up the rice paper will help prevent the filling from bursting out).

  7. Repeat until the filling is all gone.

  8. Heat a pan with coconut oil or butter flavoured olive oil. Place the dumplings in the pan and cook on medium heat until crispy. Making sure to flip so both sides get cooked.

  9. Make the coconut cream icing. Add the coconut cream and powdered sugar to a bowl and whisk until an icing forms. Dip and enjoy!
